Recipe: Classic Shepherd’s Pie with Pasture-Fed Mutton Mince

Ingredients:

For the Mutton Mince Filling:

  • 1 pound pasture-fed mutton mince
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef or vegetable broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Fresh thyme leaves for garnish (optional)

For the Mashed Potato Topping:

  • 4 large russet potatoes, peeled and cut into chunks
  • 1/4 cup butter
  • 1/4 cup milk
  • Salt and black pepper, to taste

Instructions:

For the Mutton Mince Filling:

  1. In a large skillet, heat olive oil over medium-high heat. Add chopped onion and minced garlic. Sauté until the onions become translucent.
  2. Add the pasture-fed mutton mince and cook until it browns and crumbles.
  3. Stir in diced carrots and frozen peas. Cook for an additional 3-4 minutes.
  4. Add tomato paste and Worcestershire sauce, stirring to combine.
  5. Pour in beef or vegetable broth and let it simmer for 10-15 minutes until the mixture thickens. Season with salt and black pepper.

For the Mashed Potato Topping:

  1. While the mutton mince is simmering, boil the peeled and chopped potatoes in a large pot of salted water until they are tender.
  2. Drain the potatoes and return them to the pot.
  3. Mash the potatoes, adding butter and milk gradually until you achieve a creamy and smooth consistency. Season with salt and black pepper.

Assembling and Baking:

  1. Preheat your oven to 375°F (190°C).
  2. Transfer the cooked mutton mince filling into a baking dish.
  3. Spoon the creamy mashed potatoes on top of the filling, spreading them evenly.
  4. Use a fork to create decorative lines on the potato topping.
  5. Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown.
  6. Garnish with fresh thyme leaves if desired and serve hot.
