Recipe: Slow-Simmered Free-Range Pork Bone Broth

Ingredients:

  • 3-4 pounds free-range pork bones
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 onion, halved
  • 4 cloves garlic, smashed
  • 2 bay leaves
  • 1 tablespoon whole black peppercorns
  • 2 tablespoons apple cider vinegar
  • 12 cups water (approx.)
  • Salt, to taste

Instructions:

For Preparing Pork Bone Broth:

  1. Preheat your oven to 400°F (200°C). Place the free-range pork bones on a baking sheet and roast them for about 30 minutes until they turn brown and fragrant. This step enhances the flavor of the broth.
  2. In a large stockpot, combine the roasted pork bones, chopped carrots, celery, onion halves, smashed garlic cloves, bay leaves, and whole black peppercorns.
  3. Add the apple cider vinegar, which helps extract nutrients from the bones.
  4. Pour in enough water to cover all the ingredients by about an inch or two.
  5. Slowly bring the mixture to a boil over medium-high heat. As it comes to a boil, skim off any impurities that rise to the surface.
  6. Once the broth is boiling, reduce the heat to low and let it simmer gently. Cover the pot and let it simmer for at least 6-8 hours. The longer it simmers, the richer the flavor will become.
  7. Periodically check the water level, adding more if needed to keep the ingredients submerged.
  8. After simmering, strain the broth through a fine mesh sieve or cheesecloth into a clean container. Discard the solids.
  9. Season the pork bone broth with salt to taste.
