Recipe: Herb-Crusted Roasted Pasture-Fed Mutton Rack

Ingredients:

For the Mutton Rack:

  • 1  mutton rack (approximately 2-2.5 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • Zest of 1 lemon
  • 2 tablespoons Dijon mustard
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the Herb Crust:

  • 1 cup fresh breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons olive oil

Instructions:

For Preparing the Mutton Rack:

  1. In a bowl, combine minced garlic, chopped fresh rosemary, fresh thyme leaves, lemon zest, Dijon mustard, salt, black pepper, and olive oil to create the marinade.
  2. Rub the pasture-fed mutton rack with the marinade mixture, ensuring it’s evenly coated. Let it marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.

For the Herb Crust:

  1. In a separate bowl, combine fresh breadcrumbs, chopped fresh parsley, mint, rosemary, and olive oil. Mix well to create the herb crust.

Roasting the Mutton Rack:

  1. Preheat your oven to 400°F (204°C).
  2. Heat a skillet over high heat and sear the marinated pasture-fed mutton rack on all sides until it develops a golden-brown crust.
  3. Remove the mutton rack from the skillet and generously coat it with the prepared herb crust, pressing it onto the meat.
  4. Place the herb-crusted mutton rack in a roasting pan and roast it in the preheated oven for approximately 20-25 minutes for medium-rare or adjust the cooking time to your preferred level of doneness.
  5. Remove from the oven and let the mutton rack rest for 10 minutes before slicing into individual chops.
