For the Mutton Rack:
- 1 mutton rack (approximately 2-2.5 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme leaves
- Zest of 1 lemon
- 2 tablespoons Dijon mustard
- Salt and black pepper, to taste
- 2 tablespoons olive oil
For the Herb Crust:
- 1 cup fresh breadcrumbs
- 2 tablespoons fresh parsley, finely chopped
- 2 tablespoons fresh mint, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 2 tablespoons olive oil
Instructions:
For Preparing the Mutton Rack:
- In a bowl, combine minced garlic, chopped fresh rosemary, fresh thyme leaves, lemon zest, Dijon mustard, salt, black pepper, and olive oil to create the marinade.
- Rub the pasture-fed mutton rack with the marinade mixture, ensuring it’s evenly coated. Let it marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.
For the Herb Crust:
- In a separate bowl, combine fresh breadcrumbs, chopped fresh parsley, mint, rosemary, and olive oil. Mix well to create the herb crust.
Roasting the Mutton Rack:
- Preheat your oven to 400°F (204°C).
- Heat a skillet over high heat and sear the marinated pasture-fed mutton rack on all sides until it develops a golden-brown crust.
- Remove the mutton rack from the skillet and generously coat it with the prepared herb crust, pressing it onto the meat.
- Place the herb-crusted mutton rack in a roasting pan and roast it in the preheated oven for approximately 20-25 minutes for medium-rare or adjust the cooking time to your preferred level of doneness.
- Remove from the oven and let the mutton rack rest for 10 minutes before slicing into individual chops.
- Serve the herb-crusted roasted pasture-fed mutton rack with your choice of sides, such as roasted vegetables or a fresh salad.
