Recipe: Pan-Seared Venison Steaks with Red Wine Reduction

Ingredients:

The Venison:

  • 2 Venison Steaks (6-8 ounces each)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 cloves garlic, minced
  • Fresh rosemary sprigs

For the Red Wine Reduction:

  • 1 cup red wine
  • 1/4 cup beef or vegetable broth
  • 1 tablespoon butter
  • 1 shallot, finely chopped
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste

Instructions:

For the Venison:

  1. Season the Wild Venison Steaks generously with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add minced garlic and fresh rosemary sprigs.
  3. Sear the venison steaks for 2-3 minutes on each side for medium-rare, or longer according to your desired level of doneness.
  4. Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

For the Red Wine Reduction:

  1. In the same skillet, add chopped shallot and sauté until translucent.
