Recipe: Venison Burgers with Blueberry-Balsamic Glaze


The Burgers:

  • 1 pound Venison Burger Patties
  • 4 hamburger buns
  • 4 slices of your favorite cheese (optional)
  • 1 red onion, thinly sliced
  • 1 cup arugula or spinach leaves
  • Salt and black pepper, to taste

For the Blueberry-Balsamic Glaze:

  • 1 cup fresh or frozen blueberries
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon fresh rosemary, finely chopped
  • Salt and black pepper, to taste


The Blueberry-Balsamic Glaze:

  1. In a saucepan, combine blueberries, balsamic vinegar, honey, and fresh rosemary.
  2. Bring the mixture to a gentle simmer over medium-low heat.
  3. Cook for 10-15 minutes or until the blueberries burst and the glaze thickens.
  4. Season with salt and black pepper. Set aside.

For the Burgers:

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. Season the Wild Venison Burger Patties with salt and black pepper.
  3. Grill the burgers for about 3-4 minutes per side for medium-rare, or to your desired level of doneness.
  4. During the last minute of cooking, add a slice of cheese to each patty, if using, and cover the grill to melt the cheese.
  5. Toast the hamburger buns on the grill until lightly browned.

To Assemble:

  1. Spread a generous spoonful of the Blueberry-Balsamic Glaze on the bottom half of each bun.
  2. Place a Wild Venison Burger with melted cheese on top.
  3. Add sliced red onion and a handful of arugula or spinach leaves.
  4. Top with the other half of the bun.
