Ingredients:

For the Pheasant:

  • 2 Christmas Wild Oven Ready Pheasant
  • Salt and freshly ground black pepper, to taste
  • 4 slices of bacon
  • 2 tablespoons olive oil
  • 4 sprigs of fresh rosemary
  • 4 sprigs of fresh thyme

The Glaze:

  • 1 cup cranberry sauce
  • 1/2 cup port wine
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • Zest of one orange
Instructions:

For the Pheasant:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the pheasants inside and out, and pat them dry with paper towels.
  3. Season the pheasants inside and out with salt and freshly ground black pepper.
  4. Place 2 sprigs of rosemary and 2 sprigs of thyme inside each pheasant cavity.
  5. Wrap each pheasant with 2 slices of bacon to help keep them moist during roasting.

The Glaze:

  1. In a saucepan, combine cranberry sauce, port wine, balsamic vinegar, honey, and orange zest. Simmer over low heat, stirring until the glaze thickens.
  2. Season the glaze with salt and pepper to taste.

Assembly:

  1. In a roasting pan, heat olive oil over medium-high heat. Brown the pheasants on all sides.
  2. Brush the pheasants with the cranberry and port wine glaze, covering them generously.
  3. Roast the pheasants in the preheated oven for approximately 40-45 minutes or until the internal temperature reaches 165°F (74°C).
  4. Allow the pheasants to rest for about 10 minutes before carving.
