Traditionally at Model Farm we used pork belly for making sausages.
However in recent years it has become a delicacy in its own right. Ideal for slow roasting, this cut is packed full of flavour.
It is certainly not the leanest of cuts but cannot be beaten as a rare treat. Supplied with the rind on.
Depending on appetite, you can feed 3-4 people per 1kg. Anymore than 3 adults and you may want to look at 1.5kg and up.
