Recipe: Spiced Pasture-Fed Mutton Koftas with Yogurt Mint Sauce


For the Mutton Koftas:

  • 1 pound pasture-fed mutton, minced
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground paprika
  • Salt and black pepper, to taste
  • Olive oil for grilling

For the Yogurt Mint Sauce:

  • 1 cup Greek yogurt
  • 2 tablespoons fresh mint leaves, finely chopped
  • 1 clove garlic, minced
  • Juice of 1 lemon
  • Salt and black pepper, to taste


For the Mutton Koftas:

  1. In a large mixing bowl, combine the minced pasture-fed mutton, grated onion, minced garlic, minced ginger, fresh cilantro, fresh mint leaves, ground cumin, ground coriander, ground cinnamon, ground paprika, salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined.
  3. Take small portions of the mixture and shape them into oval or cylindrical kofta patties.
  4. Preheat your grill to medium-high heat and brush the grates with olive oil to prevent sticking.
  5. Grill the pasture-fed mutton koftas for approximately 4-5 minutes per side or until they are cooked through and have a nice char.

For the Yogurt Mint Sauce:

  1. In a bowl, combine the Greek yogurt, chopped fresh mint leaves, minced garlic, lemon juice, salt, and black pepper. Mix well to create the sauce.
  2. Serve the grilled pasture-fed mutton koftas hot, accompanied by the yogurt mint sauce for dipping.
