Recipe: Roast Organic Capon with Herb Butter and Citrus Glaze

Ingredients:

For the Capon:

  • 1 Capon (about 6-7 pounds)
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped

The Citrus Glaze:

  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup honey
  • Zest of one orange and one lemon
  • 1 tablespoon Dijon mustard
Instructions:

For the Capon:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the Capon inside and out, and pat it dry with paper towels.
  3. Season the capon inside and out with salt and freshly ground black pepper.
  4. In a small bowl, combine the softened butter, minced garlic, and chopped herbs.
  5. Gently lift the skin of the capon and spread the herb butter mixture underneath, covering the breast and thigh meat.

The Citrus Glaze:

  1. In a saucepan, combine orange juice, lemon juice, honey, zest of orange and lemon, and Dijon mustard. Simmer over low heat, stirring until the glaze thickens.
  2. Season the glaze with salt and pepper to taste.

Assembly:

  1. Place the herb-stuffed Capon in a roasting pan.
  2. Brush the capon with the citrus glaze, covering it generously.
  3. Roast the capon in the preheated oven for about 2 to 2.5 hours, basting with the citrus glaze every 20-30 minutes, until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  4. Allow the capon to rest for about 15 minutes before carving.
