Recipe: Spicy Free-Range Pork Sausage Pasta

  • 4 Free-Range Spicy Pork Sausages
  • 8 oz (about 2 cups) penne pasta
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish

Cooking Sausages:

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. Grill the Free-Range Spicy Pork Sausages for about 12-15 minutes, turning occasionally until they are evenly cooked and have a nice char. Ensure the internal temperature reaches 160°F (71°C).
  3. Remove the sausages from the grill and let them rest for a few minutes before slicing them into rounds.

Preparing Pasta:

  1. While the sausages are cooking, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Making Spicy Tomato Sauce:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the diced tomatoes (with their juice), dried oregano, dried basil, red pepper flakes, salt, and black pepper to the skillet. Stir to combine.
  4. Let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together and the sauce to thicken.

For Final Assembly:

  1. Add the cooked penne pasta to the skillet with the spicy tomato sauce. Toss to coat the pasta evenly.
  2. Gently fold in the sliced Free-Range Spicy Pork Sausages.
  3. Serve the Spicy Free-Range Pork Sausage Pasta hot, garnished with grated Parmesan cheese and fresh basil leaves.
