  2. Cut the pork fat into small, uniform pieces. Smaller pieces render more efficiently.

  4. Add a small amount of water to the pot, just enough to cover the bottom. This prevents the fat from sticking to the pot initially.
  5. Set the heat to low or turn on the slow cooker to its lowest setting. Allow the pork fat to slowly melt and render. This process can take several hours, so be patient.
  6. Stir occasionally to ensure even rendering. As the fat melts, it will become clear, and small crispy bits (called cracklings) will form.
  7. Once the fat has completely melted, strain it through a fine mesh sieve or cheesecloth into a heatproof container. This will separate the liquid pork lard from the cracklings.
  8. Allow the liquid lard to cool to room temperature.
