Recipe: Orange and Rosemary-Glazed Christmas Free-Range Duck

Ingredients:

For the Duck:

  • 1 Christmas Free-Range Duck (size to suit your gathering)
  • Salt and black pepper, to taste
  • 2 oranges, zested and juiced
  • 3-4 sprigs of fresh rosemary

The Glaze:

  • 1/2 cup orange marmalade
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
Instructions:

For the Duck:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the duck inside and out and pat it dry with paper towels.
  3. Season the duck inside and out with salt and black pepper.
  4. Zest the oranges and set aside for the glaze. Place the zested orange halves and rosemary sprigs inside the duck cavity.
  5. Truss the duck with kitchen twine to help it keep its shape during roasting.

The Glaze:

  1. In a saucepan, combine the orange marmalade, honey, balsamic vinegar, and minced garlic. Heat over medium heat, stirring until the mixture is well combined and slightly reduced.
