Topside is what we would refer to as the everyday beef roast. It is quite a lean joint and if cooked rare and cut thinly it is just simply delicious. We hang our topside for a minimum of three weeks and quite often it hangs for over four to ensure that it is succulent and tender.
Depending on appetite, you can feed 3-4 people per 1kg. Anymore than 3 adults and you may want to look at 1.5kg and up.
